Mr. Phipps Pebble beans are legendary on the San Mateo Coast. Fifth Crow Farm's neighbor, Tom Phipps, was a connoisseur of heirloom beans, growing over 60 varieties on his farm in Pescadero. He was so well known for his heirloom beans that the New York Times wrote an article about he and his wife, Valerie in 1997. The Phipps supplied restaurants like Chez Panisse with their amazing beans. Since Mr. Phipps has passed, Fifth Crow Farm continues to grow his pebble beans, keeping his legacy alive.
Mr. Phipps created this "pebble" variety himself. While it looks like all the beans are different varieties, they come from the same plant!
Pebble Beans are smaller in size and incredibly easy to cook. After soaking overnight, bring them to boil in a pot with olive oil, a head of garlic, one small onion, a bay leaf, salta and other fresh herbs you have on hand (rosemary, thyme, parsley, etc.). Cover, reduce to a simmer, and let them cook for an hour or so. When the beans are silky and creamy in texture, remove the onion, garlic, and herbs, taste, and add salt and pepper as needed. Serve as a side dish or with crusty bread.
