Hikari Farm is a certified organic greenhouse operation in Watsonville, CA, founded by Akira Nagamine, who arrived in the United States in 1956 from Kagoshima, Japan, with $24 in his pocket. He founded his own farm in 1967, eventually growing the Japanese cucumbers that became a Bay Area obsession. Today the farm is run by his daughter Janet, a physician who returned to continue the family legacy. Japanese cucumbers are thin-skinned and virtually seedless — sweet, crisp, and completely free of the bitterness that makes standard slicing cucumbers so forgettable. Eat them fresh, slice into spears with a dip, or chop into a salad.
