Grey Oyster is one of the most widely consumed mushrooms in the world — fan-shaped, light grey to greyish-brown, with a mildly earthy flavor, a smooth oyster-like texture when cooked, and a subtle hint of anise. More delicate than most mushrooms, it absorbs whatever it's cooked with beautifully. A staple in Japanese, Korean, and Chinese cuisine, and equally at home in soups, pasta, stir-fries, or sautéed simply in butter and garlic.

Mycopia is a certified organic and kosher specialty mushroom grower based in Sebastopol, CA, founded in 1977 as the first company to commercially cultivate shiitake mushrooms in the United States. All mushrooms are grown on an oak-based substrate, hand-harvested, and hand-packed. After harvest, the spent substrate is recycled into compost for local farms and wineries.

Order now so farms can harvest to order. Last call: Tuesday 8/11 midnight for Thursday 8/13 delivery. Order early this weekend for a full view of next week’s harvest.
