Forest Nameko is a Japanese mushroom variety with small amber-to-orange caps coated in a naturally occurring gelatinous layer that acts as a light thickener in soups and sauces. The flavor is earthy and forest-forward with a sweet, cashew-like aroma — enhanced when sautéed, and silky in texture. A staple of traditional miso soup and equally at home in stir-fries, risotto, and hot pots.

Mycopia is a certified organic and kosher specialty mushroom grower based in Sebastopol, CA, founded in 1977 as the first company to commercially cultivate shiitake mushrooms in the United States. All mushrooms are grown on an oak-based substrate, hand-harvested, and hand-packed. After harvest, the spent substrate is recycled into compost for local farms and wineries.

Order now so farms can harvest to order. Last call: Tuesday 8/11 midnight for Thursday 8/13 delivery. Order early this weekend for a full view of next week’s harvest.
